Hot Honey Beef Bowl

Hot Honey Beef Bowl

Serves 4

Ingredients

  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne
  • 2 sweet potaties
  • Neutral oil
  • 1 teaspoon sesame oil
  • 1 pound ground beef
  • 2 tablespoons gochujang
  • 3/4 cup chicken or beef broth
  • 1 teaspoon dark soy sauce
  • Kosher salt & coarse gournd black pepper
  • 2 avocados, peeled and diced
  • 1.3 cups cottage cheese
  • Green onions and sesame seeds to garnish

Directions

  1. Combine paprika, chili powder and cayenne in a small bowl, mix to combine and set aside
  2. Preheat air fryer to 400
  3. Peel and dice sweet potatoes, and put in a large bowl with about 1 tablespoon oil and about a teaspoon of the seasoning - mix well and air fry 15 minutes, shaking halfway
  4. Heat a large pan with about a tablespoon of oil and the sesame oil - add the beef and cook until it's no longer pink - drain the grease
  5. Put back on the heat and add the gochujang, and when mixed in add couple teaspoons of the seasoning - stirring well to combine
  6. Add the beef broth and soy, stir wekk and let simmer 6-7 minutes or until evaporated
  7. Serve in a bowl with some of thr beef, avocado, sweet potatoes and cottage cheese
  8. Drizzle honey over any or all of it - I like it on everything but the avos, then garnish with some green onion and sesame seeds
