In-N-Out Breakfast Sandwich

In-N-Out Breakfast Sandwich

Of course In-N-Out doesn't make a breakfast sandwich, but if they did THIS SHOULD BE THE ONE.

Makes 4

Ingredients

Burger

  • 1 pound ground pork breakfast sausage, see recipe below
  • ½ cup mayo
  • 2 tablespoons ketchup
  • 3 tablespoons yellow mustard
  • 2 teaspoons relish
  • 4 eggs
  • 4 slices American cheese
  • 4 rings yellow onion
  • Butter
  • Kosher salt coarse ground black pepper
  • 4 soft hamburger buns

Breakfast Sausage

  • 1 pound pork shoulder, cut into cubes
  • ½ pound pork belly, skin removed, cut into cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons dried sage
  • ½ teaspoon dried thyme
  • ½ teaspoon brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes

Directions

Burger

  1. Combine mayo, ketchup, 2 tablespoons of the mustard and the relish in a small bowl, mix well and set aside
  2. Shape pork into four, 4 ounce balls (you’ll have leftover and that’s good)
  3. Lightly butter flat top, add onion slices and cook until nicely caramelized – carefully flipping once
  4. Add pork and smash, season with salt & pepper
  5. Spread tops with mustard and cooked until ¾ done, flip and top with cheese
  6. Add eggs to flat top and cook the way you like, runny yolk or not
  7. Toast buns and build: bottom bun, sauce, patty with cheese, egg, top bun with more sauce

Breakfast Sausage

  1. Chill pork cubes in freezer 45 minutes
  2. Run the pork shoulder and belly together through the food processor, and pulse in small batches until you get a coarse grind, don’t puree it – then put in a bowl
  3. Add spices, and mix well until evenly combined
  4. Use it or save it – 2 days in the fridge or 3months in the freezer
