Japanese Chicken & Waffles

Ingredients

Kewpie Yum Yum Sauce

  • 1/2 cup Kewpie Mayonnaise
  • 1 tablespoon ketchup
  • 1/2 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • ¼ teaspoon paprika
  • 1 to 2 tablespoons water

Smash-Style Chicken Thighs

  • 4 boneless, skin-on chicken thighs
  • Kosher salt
  • Freshly ground black pepper
  • ½ teaspoon garlic powder
  • Neutral oil

Green Onion Waffles

  • Enough ‘just add water’ waffle mix for 4 waffles
  • ¾ cup thinly sliced green onions

Directions

Kewpie Yum Yum Sauce

  1. Whisk everything except the water until smooth
  2. Add water a tablespoon at a time until it reaches drizzleconsistency
  3. Refrigerate at least 1 hour before using

Smash-Style Chicken Thighs

  1. Pat thighs very dry, and season both sides with salt,pepper, and garlic powder
  2. Heat a cast iron pan over medium-high with a thin film ofoil
  3. Lay thighs skin-side down and immediately press hard with aspatula so the skin makes full contact - use a weight if you like
  4. Cook undisturbed 5-7 minutes until deeply crisp and golden,then flip and cook another 4 to 5 minutes until cooked through - you’re lookingfor them to be about 175 degrees
  5. Rest 5 minutes, slice into strips and serve with the wafflesand the Kewpie Yum Yum Sauce

Green Onion Waffles
