Kewpie Fried Chicken Nuggets
Makes a pound

Ingredients
1 pound boneless, skinless chicken thighs cut into chunks
1/4 cup Kewpie mayo, plus extra for serving
1 tablespoon soy sauce
1 (1 oz) Ranch seasoning packet
1.5 cups corn or potato starch for coating
Oil for frying
Directions
Combine chicken, Kewpie, soy & ranch seasoning in a large bowl - mix really well to combine and set aside 30 minutes
Heat oil to 325
Remove chicken from marinade, shale off excess and coat with starch
Fry first at 325 about 2 1/2 minutes - then remove and repeat with remaining chicken (don't overcrowd)
Turn heat up to 375 and cook again about a minute until cool=ked through and golden brown - remove
Serve with extra Kewpie for dipping
