Korean Smash Burger

I can't say it enough - using condiments from other places is the best way to up your food world. And the gochujang in this is uh-may-zing.

Makes 2 doubles

Ingredients

Glaze

  • 1 tablespoon gochujang
  • 1 tablespoon soy
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar or honey
  • 1 clove garlic, minced

Kimchi Slaw

  • 1/2 cup shredded cabbage
  • 1/4 cup chopped kimchi, with a splash of the juice
  • 1 tablespoon mayo
  • Pinch of sugar
  • 3 green onions, chopped

Burger

  • 16 ounces 80/20 ground beef
  • Kosher salt & coarse ground black pepper
  • 1 tablespoon gochujang
  • 4 slices American cheese
  • 2 soft buns

Directions

  1. Stir glaze ingredients together in a small bowl, set aside
  2. Combine cabbage, kimchi with juice and mayo - mix well
  3. Season the beef balls with salt and pepper, and spoon gochujang on top of each one
  4. Get your skillet or griddle super hot, add a little oil then put the beef balls - gochujang-side down and smash hard
  5. Let it crust, flip, brush with the glaze, add cheese and cover to melt
  6. Build - toast buns, add some glaze then top with 2 patties each, the slaw and top bun with more glaze
