Lobster Roll Dog

You could make a regular hot dog, or... you could make this. A buttery grilled bun holding a juicy dog topped with chilled, creamy lobster, celery salt, and lemon-chive aioli. It’s part lobster roll, part hot dog, and 100% showoff.

Makes 4

Ingredients

Dogs

  • 8 ounces cooked lobster meat, cut up (see below for poaching)
  • 2 tablespoons mayo
  • 2 teaspoons Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 green onions, diced
  • 1 tablespoon chopped fresh chives
  • 1/2 teaspoon celery salt, plus extra for garnishing
  • Salt & pepper to taste
  • 4 all-beef hot dogs
  • 4 brioche hot dog buns
  • Butter for toasting
  • Celery salt, for garnish

Lemon Aioli

  • ¼ cup mayo
  • 1 teaspoon grated lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon chopped fresh chives
  • 1/2 teaspoon garlic powder

Poaching

  • 2 lobster tails, shells removed
  • 3/4 cup unsalted butter
  • 1 large clove garlic, smashed

Directions

Dogs

  1. In a bowl put the lobster meat, mayo, Dijon, lemon juice, green onion, chives, celery salt, and salt & pepper to taste - toss to combine
  2. Put all aioli ingredients in a small bowl and mix well, set aside
  3. Cook dogs anyway you like, and as they're finishing butter the buns and toast or grill or griddle or whatever you do - just be sure to heat them somehow
  4. Build: toasted bun, lemon aioli, dog, lobster business and garnish with a little more celery salt

Poaching

  1. Remove the tails from the shell and pat dry with paper towels
  2. In a small saucepan, melt the butter over low heat, and the add garlic
  3. Keep the butter just warm, def not bubbling. Then add the tails and poach gently 4-5 minutes or until approximately 130 degrees
  4. Remove from the butter, let rest a minute, then slice
