Marinara & Goat Cheese Eggs

30 Days of Eggs - Day 3

Something special happens when a good tomato sauce meets goat cheese. And when the runny yolk gets involved...it turns magical

Makes 1

Ingredients

  • 1 egg
  • Butter
  • Ciabatta, baguette or any good toast
  • 3 tablespoons softened goat cheese
  • 1/4 cup Everyday Tomato Sauce, or your own marinara etc - warm
  • Kosher salt & coarse ground black pepper
  • Parsley & extra virgin olive oil for serving

Directions

  1. Cook the egg to your liking - but just sayin, this demands a runny yolk
  2. Butter ciabatta and grill in a non-stick pan until golden - or toast but it's not quite the same
  3. To make: spread goat cheese on the toast, add the marinara, the egg (seasoned with salt & pepper) then drizzle with the olive oil and sprinkle on a little parsley
