Marry Me Chicken Pizza

All the creamy, garlicky, sun-dried tomato deliciousness of Marry Me Chicken, but turned into a pizza.

Makes two 12" Pizzas

Ingredients

  • 16 ounces pizza dough
  • 2 tablespoons live oil
  • 2 cloves garlic, minced
  • 3/4 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken stock
  • ¾ cup grated Parmesan cheese
  • ½ - 1 teaspoon red pepper flakes
  • Kosher salt & coarse ground black pepper
  • 2 cups shredded mozzarella
  • 2.5 cups shredded, cooked chicken
  • Fresh basil leaves

Directions

  1. Remove dough from fridge about 90 minutes before using
  2. Preheat oven to 500, or as hot as you can - and if using a pizza stone, heat it too
  3. Heat olive oil and add garlic, stir and cook about 30 seconds, then add the sun-dried tomatoes, cream and stock - simmer 5 minutes
  4. Add in the Parmesan, stirring until smooth, creamy and thickened, season with chili flakes, salt, and pepper
  5. Cut dough in half, form into 2 balls and roll each out to a 12 inch circle
  6. Flour a pizza peel or sheet pan, add the stretched dough and spread on a layer of the Marry Me sauce
  7. Top with some mozzarella, the chicken and a few more spoonfuls of the sauce
  8. Bake 8–12 minutes or until crust is golden and cheese bubbly
  9. Drizzle with any leftover sauce, add a bit more Parm and top with the basil leaves
