Mini Cottage Cheese Cheesecakes

Mini Cottage Cheese Cheesecakes

Makes 12 mini cheesecakes


  • 2 cups cottage cheese
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 teaspoons orange liqueur - or substitute with vanilla, orange or lemon extract  
  • 2 large eggs
  • 1/2 cup sour cream
  • A pinch of salt
  • 12 vanilla cookie wafers
  • Apricot jam for topping, fresh fruit, even drizzly chocolate– really anything you like


  1. Preheat oven to 325
  2. Put all ingredients except the wafers & jam in a blender or processor, and whiz until smooth
  3. Put paper muffin cups in a muffin pan, drop one wafer in the bottom of each, then fill about ¾ full
  4. Bake approximately 40 minutes, or until a toothpick pushed into one comes out clean
  5. Let cool before serving, then top with a teaspoon of jam, or whatever works for you
