Molten Green Chili Cheeseburger

Molten Green Chili Cheeseburger

Makes 2

Ingredients

Green Chili Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoon flour
  • 1 cup milk
  • 1 1/2 cups sharp cheddar
  • 4.5 ounce can diced green chilies
  • 3 tablespoons taco seasoning

Burger

  • 1 large poblano pepper
  • ¾ pound ground beef, 80/20
  • ¼ pound pork chorizo
  • Oil
  • 4 slices American cheese
  • 2 brioche buns
  • Mayo

Directions

Green Chili Cheese Sauce

  1. Melt 2 tablespoons butter in a saucepan over medium heat
  2. Whisk in the flour until smooth – let cook a couple minutes
  3. Pour milk into butter mixture, a little at a time, whisking until smooth before adding more - cook and stir until mixture thickens, about 3 minutes
  4. Reduce heat to low and stir in the cheddar, a little at a time cheddar until super smooth
  5. Add the green chiles and 2 tablespoons of the taco seasoning - stir until fully incorporated – set aside

Burger

  1. Heat grill to high, lightly oil poblano and put on the grates – let cook until charred on all sides then put into a paper bag – seal shut for 10 minutes
  2. Take out of bag, remove the outside layer, cut open and remove stem and seeds – set aside
  3. Combine beef, chorizo and remaining taco seasoning – mix well then separate into 4 balls
  4. Heat flattop to medium high, add some oil and then the balls– flatten with a spatula and cook about 2 minutes
  5. Flip over, add some poblano to each patty then top with aslice of cheese – cook about another minute
  6. Toast buns and build:
  7. Bun, mayo, patty with cheese, patty with cheese top bun
