There are so many kinds of ’shrooms out there - it doesn’t matter what you use -just choose your favorites!
Ingredients
1/2 pound mixed mushrooms, sliced thin
2 large shallots, diced
1 large clove garlic, minced
5 ounces softened goat cheese
2 tablespoons parsley, chopped
1 sheet puff pastry
Olive oil
Directions
Preheat oven to 400
Heat olive oil in medium pan and saute mushrooms until softened
Add shallots and garlic; mix well and cook for 2 minutes
Remove from heat and put in large bowl; allow to cool slightly
Add goat cheese and parsley
Mix well
Spread puff pastry sheet on a lightly floured surface
Place mushroom mixture in middle of sheet and fold ends over the top and seal edges
Place seam-side down on a well greased baking sheet, make some small decorative slices with a sharp knife across the top; but don’t cut all the way through
