My Favorite Creamed Spinach

My Favorite Creamed Spinach

Serves 6-8

Ingredients

  • 3 - 10 ounce packages frozen chopped spinach - thawed and squeezed dry
  • 4 tablespoons butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 4 tablespoons all-purpose flour
  • 1 cup milk, or more if you like it creamier
  • 1 cup whipping cream, or more if you like it creamier
  • 1 cup grated parmesan cheese
  • 1 teaspoon kosher salt (plus more to taste)
  • 1/2 teaspoon black pepper

Directions

  1. Melt the butter in a large skillet over medium heat, add the onion and cook 4 to 5 minutes until softened, then add the garlic and cook about 30 seconds
  2. Sprinkle in the flour and stir to make a smooth paste, cook 1 to 2 minutes so the flour flavor cooks out
  3. Slowly whisk in the milk and whipping cream, and bring to a gentle simmer until the sauce thickens and becomes smooth
  4. Stir in the parmesan, salt & pepper - taste and adjust seasonings
  5. Add the spinach, fold it into the sauce and let it heat through
  6. Serve warm

Want to make it ahead? Just keep it covered in the fridge then warm over low heat before serving - you'll need to add a little more milk or cream to loose
