Nacho Burger

Nachos and burgers - this couldn't scream summer more if it tried.

Ingredients

Burger

  • 2 beef patties, 6 ounces each
  • Kosher salt & coarse ground pepper
  • 2 slices pepper jack cheese
  • 2 brioche buns, toasted
  • Shredded iceberg lettuce
  • Mayo
  • 2 handfuls tortilla chips

BBQ Sauce

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy
  • 2 tablespoons minced chipotle peppers
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne

Nacho Cheese Sauce

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 cup milk
  • 1 large clove garlic, minced
  • 3/4 cup shredded cheddar cheese
  • Kosher salt & coarse ground pepper
  • 2-3 tablespoons diced green onion

Directions

Burger

  1. Heat grill to medium high, and season patties with salt & pepper
  2. Grill until done to your liking - prob 3-4 minutes a side for medium-ish
  3. Add bbq sauce and cheese during the last minute and cover to melt - remove and let rest 5 minutes
  4. Build: Bottom bun, mayo and bbq sauce, lettuce, patty w/cheese, more bbq sauce, tortilla chips, cheese sauce, top bun

BBQ Sauce

  1. Combine all ingredients in a small pot over medium low heat, stir well and let simmer about 10 minutes

Nacho Cheese Sauce

  1. Melt butter over medium heat and whisk in flour, cook 1 minute
  2. Slowly whisk in the milk, then let thicken 1–2 minutes
  3. Stir in the garlic, slowly begin adding cheese, stirring after every 1/4 cup until melted
  4. Mix in the green onions, keep warm
