Nachos on a Stick

Ah yes, fair season - the time of year when perfectly reasonable foods get skewered, deep fried, covered in cheese, and somehow become even better versions of themselves. Corn dogs? Of course. Deep fried butter? Apparently. So why not nachos on a stick?

This is everything you want from a plate of ballpark nachos, just in a way that lets you eat them while wandering past the Tilt-A-Whirl with one hand and holding an Orange Julius with the other. Crunchy, cheesy, slightly spicy, and gloriously unnecessary.

And then there's the queso. Not some fancy cheese sauce pretending to be something it's not. This is jalapeño Cheez Whiz queso, and it's exactly the kind of thing fair food dreams are made of.

Ingredients

Nachos

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 large egg
  • 1/2 cup finely crushed tortilla chips
  • 1/2 cup shredded sharp cheddar
  • 2 tablespoons finely minced pickled jalapeños
  • 4 pepper jack cheese sticks, cut in half crosswise

Breading

  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 tablespoon water
  • 1 1/2 cups finely crushed tortilla chips
  • 1/2 cup panko breadcrumbs

Jalapeño Cheez Whiz Queso

  • 1 cup Cheez Whiz
  • 3 tablespoons diced pickled jalapeños
  • 1-2 tablespoon pickled jalapeño juice, or enough to get it as thick or thin as you like
  • 1/4 teaspoon garlic powder

Directions

  1. Cook the beef in a skillet over medium-high heat until browned. Drain if necessary
  2. Add the taco seasoning and water and cook until the mixture is thick and almost dry. Transfer to a bowl and let cool completely
  3. Once cool, mix in the egg, crushed tortilla chips, cheddar cheese, and jalapeños - stir until well combined
  4. Divide the mixture into 8 equal portions
  5. Take one portion and flatten it into a rectangle in your palm. Place a half stick of the cheese in the center and wrap the meat mixture completely around it, sealing all sides. Roll gently into a log shape - repeat with the remaining portions
  6. Place on a parchment-lined tray and freeze for 45 minutes, or until firm
  7. Heat oil to 350
  8. Fry in batches for 5-7 minutes, until deeply golden brown and crisp, then transfer to a wire rack and let rest for 2 minutes.
  9. Push a stick into one end and serve with the warm queso

Breading

  1. Set up a breading station with flour in one bowl, beaten eggs and water in another, and the tortilla chip-panko mixture in a third
  2. Coat each log in flour, then egg, then the tortilla chip mixture, then freeze another 15 minutes

Jalapeño Cheez Whiz Queso

  1. Add everything to a small saucepan over low heat, and whisk until smooth and hot, about 2-3 minutes
  2. If it's too thick, add more jalapeño
