Nashvilled Hot Dogs

Nashvilled Hot Dogs

Makes 4

Ingredients

Dogs

  • 4 all-beef hot dogs
  • 4 hot dog buns, or…slices white sandwich bread if you’re committing - and you should
  • ½ cup neutral oil
  • 2 tablespoons cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher salt
  • Dill pickle chips
  • 4 all-beef hot dogs
  • 4 hot dog buns, or…slices white sandwich bread if you’re committing - and you should
  • Hot honey

Coleslaw

  • 1 cup mixed slaw cabbage
  • 2 cups thinly sliced green cabbage, lightly packed
  • 3 tablespoons mayo
  • 1 tablespoon pickle juice
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1/8 teaspoon smoked paprika

Comeback Sauce

  • 1/4 cup mayonnaise
  • 2 tablespoons chili sauce (like Heinz)
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon hot sauce, more if you like it hotter
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt

Directions

Dogs

  1. Heat the oil in a small saucepan over medium heat until shimmering but not smoking, remove from heat and whisk in the cayenne, brown sugar, paprika, garlic powder, onion powder, and salt. Let it bloom while you cook the dogs
  2. Butterfly the dogs, make littles slits down the sides - or just leave as it
  3. Heat a skillet over medium-high, add a little of the Nashville oil and cook the hot dogs, rolling them around, brushing with extra sauce as you go until deeply browned and blistered all over
  4. Warm the buns or, if you’re going full Nashville, lightly toast slices of bread until just golden
  5. Build it like this: bread or bun, comeback sauce, slaw, hot dog, pickle chips, and then a drizzle of honey and one more light spoon of the hot oil
  6. Eat immediately. Lean forward. Have napkins. Regret nothing.

Coleslaw

  1. Combine all ingredients in a small , mix well to combine and let it sit 10 - 15 minutes

Comeback Sauce

  1. Mix the ingredients well, set aside
