Oaxacalifornia Burrito

La Perla #3 in San Diego created this most amazing burrito. It's essentially a California burrito (carne asada + fries) but wrapped within a Oaxaca cheese quesadilla. Damnnnnnn. Just don't forget the fries.

Makes one

Ingredients

Burrito

  • Carne Asada, recipe here
  • 2 burrito size flour tortillas
  • 4 ounces Oaxaca cheese, shredded
  • 1/2 cup shredded mixed cheddar / Monteray jack cheese
  • One big handful French fries, cooked and crispy

Pico de Gallo

  • 2/3 cup finely diced white onion
  • 2/3 cup finely diced tomato
  • 3 tablespoons chopped cilantro
  • 3-4 pickled serranos, chopped
  • Good pinch kosher salt & coarse ground black pepper
  • Juice of 1/2 lime
  • Squeeze olive oil

Guacamole

  • 1 avocado
  • 3 tablespoons chopped cilantro
  • 2 pickled serranos, chopped
  • 1-2 tablespoons pickled serrano juice
  • Juice of 1/2 lime

Directions

Pico de Gallo

  1. Mix all ingredients in a small bowl

Guacamole

  1. Remove avo from shell and put in a bowl, mash lightly but still chunky
  2. Add remaining ingredients, and mix to combine

Burrito

  1. Warm both tortillas on a flattop, then add cheese to one, and top with second - let the cheese start to melt a bit
  2. Build: carne asada, topped with the shredded mixed cheese, then the fries
  3. Add the pico to one side of the carne pile, and the guac to the other - roll up
