Okonomiyaki Quesadilla
Makes 1 medium, or 2 small

Ingredients
2 tablespoons ketchup
1 tablespoon Worcestershire
1 tablespoon soy
1 teaspoon sugar
2 slices bacon, chopped
1 cup shredded cabbage
Kosher salt
6–8 medium shrimp, peeled and chopped
1 teaspoon soy sauce
2 medium or 4 small flour tortillas
3/4 cup Monterey Jack cheese
Kewpie mayo
Furikake
Directions
In a small bowl combine ketchup, Worster, soy & sugar - mix well and set aside
Cook bacon in a large, non-stick pan until browned, but still soft - remove from the plan, but leave a little grease
Add the cabbage and a pinch of salt, cook until just beginning to wilt - about a minute
Add the shrimp and soy, and stir until the shrimp are 'just done' and remove to the bacon
Wipe out pan and put in a tortilla, some of the cheese spread out, the bacon/shrimp filling, more cheese and another tortilla
Cook until beginning to brown and cheese starts to melt - flip & repeat
Remove, brush the top with the ketchup sauce, drizzle with Kewpie and sprinkle with furikake
