Osaka Okinomiyaki Cheeseburger 

Osaka Okinomiyaki Cheeseburger 

Serves 2-4

Ingredients

  • 2 tablespoons neutral oil
  • 1 large yellow onion, very thinly sliced
  • 4 cups finely shredded green cabbage
  • 2 green onions, thinly sliced
  • 2 large eggs
  • ⅓ cup all-purpose flour
  • ¼ cup dashi, or chicken stock
  • 1 tablespoon soy
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 slices bacon, or thin sliced pork belly
  • 8 ounces thinly sliced beef (gyudon, shabu-shabu, or hot pot style)
  • 1 teaspoon soy
  • 1 teaspoon mirin 
  • 2-3 slices American cheese

For serving

  • Okonomiyaki sauce
  • Kewpie mayonnaise
  • 1 sunny side up egg for serving
  • 2 tablespoons sliced green onions

Directions

  1. Heat flat-top over medium heat
  2. Add the oil and onion. Cook, stirring occasionally, until golden and caramelized
  3. Gather the onions into a compact circle about the size ofthe finished okonomiyaki and leave them in place
  4. In a large bowl combine the cabbage, green onions, eggs, flour, dashi, soy sauce, salt, and pepper - and mix until evenly combined
  5. Pile the cabbage mixture directly on top of the caramelizedonions and shape into a one inch-thick round, and lay the bacon strips across the top
  6. Cook until the bottom is golden and set, about 5 minutes then carefully flip
  7. Now cook until the bacon is browned and crisp and the cabbage is cooked through, about 4 to 5 minutes
  8. Meanwhile, combine the beef with the soy sauce, mirin - mix well
  9. Flip the okonomiyaki back over so the bacon side is facing up, and place the seasoned beef evenly over the top, then carefully flip again so the beef is now on the bottom
  10. Cook 45 to 60 seconds, just until the beef is browned, and flip one final time so the beef is now facing up
  11. Top with the American cheese, cover until melted, about aminute and transfer to a serving platter
  12. Spread with the okonomiyaki sauce, zig zig Kewpie mayo over the top then top with the egg and finish with green onions
  13. Cut into wedges and serve immediately
