Pickle de Gallo Dogs

This isn’t your ballpark hot dog. This is grilled until blistered, slathered with our hot mustard, and topped with the most ridiculous crunchy, pickle de gallo. It’s tangy, spicy, and ridiculously craveable.

Makes 4

Ingredients

Dogs

  • 1/2 cup diced white onion (yellow would be fine too,but I like the bite of white)
  • 1/2 cup diced Roma tomatoes, about 2 (I don’t use themushy insides)
  • 1/2 cup diced dill pickles, plus a little of the juice
  • 1 jalapeno pepper, seeded and finely chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • Salt & pepper to taste
  • 4 all-beef hot dogs
  • 4 brioche hot dog buns
  • Butter for toasting

Spicy Mustard

  • 1/3 cup yellow mustard
  • 1.5 teaspoons prepared horseradish
  • 1.5 teaspoon hot sauce, I'm a Cholula fan
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • Splash pickle juice

Directions

  1. Combine onion, tomatoes, pickles, jalapeno, cilantro, limejuice, olive oil and salt & pepper - mix well
  2. Combine mustard ingredients in a small bowl, mix well
  3. Cook dogs anyway you like, and butter then toast buns
  4. Build: toasted bun, spicy mustard, dog, pickle de gallo
