Pizza Breakfast Hash with Eggs

Pizza Breakfast Hash with Eggs

Leftover pizza never tasted so good

Serves 2

Ingredients

  • 2 slices leftover pizza, cut into small bite size pieces
  • 1 tablespoon olive oil or butter
  • 1/2 cup sliced. mushrooms
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/4 teaspoon each garlic powder and smoked paprika
  • Kosher salt and coarse ground black pepper
  • 1/3 cup shredded cheese
  • 4 eggs
  • Hot sauce or chili flakes, optional

Directions

  1. Warm a skillet over medium heat, and add oil or butter
  2. Put in the veggies, season with salt & pepper and cook until slightly softened, about 3 minutes
  3. Sprinkle in the garlic and paprika, stir to mix then add the chopped pizza and cook, stirring occasionally, until the crust edges get crisp, another 3-4 minutes
  4. Add the cheese and mix in, turn down to low
  5. In another pan, cook the eggs any way you'd like, season lightly with salt and pepper
  6. Serve the hash topped with the eggs
