Pizza Fried Rice

Pizza Fried Rice

This might be the best reason to have leftover pizza - ever.

Serves 2

Ingredients

  • Neutral oil
  • 1/4 cup diced onion
  • 1/4 cup diced pepper, red/green - you choose
  • 2 cups cold cooked rice
  • 1 tablespoon oil
  • 2 tablespoons diced onion
  • 2 slices leftover pizza, chopped fine
  • 1/4 cup frozen peas or mixed veg
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 2 tablespoons shredded mozzarella

Directions

  1. Heat oil in a skillet or wok over medium highheat.
  2. Add onion and cook 2 minutes.
  3. Add chopped pizza and cook until it starts tocrisp.
  4. Add vegetables and cook 1 minute.
  5. Push everything to one side and add eggs. Scramblequickly.
  6. Add rice, soy sauce, and ketchup. Stir fry untilhot and a little toasty.
  7. Turn off heat and stir in mozzarella so it getsmelty but not clumpy.
  8. Taste and add salt or pepper if needed.
