Pizza Oven Cedar Plank Salmon

I'm a fan of salmon, especially in a pizza oven - and the lemon caper butter here does not suck at all. NOTE: This is designed for cooking in a pizza oven - but no pizza oven, no problem. Just crank your oven up as far as it'll go, and cook by temperatures.

Ingredients

Salmon

  • 1 cedar plank, soaked in water 1–2 hours
  • 1½ to 2 pounds center-cut salmon filet, skin on
  • Olive oil
  • Kosher salt and course ground black pepper
  • 2 garlic cloves, smashed
  • Fresh thyme sprigs
  • 1 lemon, sliced into thin rounds

Lemon Caper Butter

  • 4 tablespoons butter
  • 1 tablespoon capers, drained and chopped
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Directions

Salmon

  1. Preheat oven to 600-650
  2. Drain plank, drizzle lightly with olive oil (but no large an area than the piece of salmon) and scatter on the garlic, herbs, and lemon slices
  3. Lay salmon on top, season with salt and pepper.
  4. Cook 6–9 minutes, rotating once
  5. Remove, and spoon the warm butter over the salmon

Lemon Caper Butter

  1. Put ingredients in small pan, and melt in the oven - mix to combine
