Pork Belly Fried Rice

Pork Belly Fried Rice

Ingredients

  • 6 ounces cooked pork belly, cut into small cubes

  • 2 cups cooked rice, cold (day-old is best)

  • 2 tablespoons pork belly fat or neutral oil (as needed)
  • 6 cloves garlic, finely chopped

  • 4 green onions, sliced
  • 3 tablespoons oyster sauce

  • 2 tablespoons soy sauce

  • 2 teaspoons sesame oil

  • 1 egg, fried for serving
  • To finish: chili crisp

Directions

  1. Cook the pork belly until crispy, then remove but leave a couple tablespoons of the fat, add some of the extra fat to a 2nd pan for the fried egg
  2. Add garlic and ¾’s of the green onions to the pork belly pan, stir until fragrant, then add the rice and cook, stirring often until starting to get a bit crispy
  3. Add in the oyster sauce, soy and sesame oil - stir well to mix through, then add the pork belly and mix to combine - cook another minute
  4. Plate(or bowl) top with the fried egg, remaining green onions and a drizzle of chili crisp
