Pulled Pork Pizza

Hey - if Dominos can make this so can we! And feel free to go 'full smoker' to make the pork, but honestly a pressure cooker and about an hour will get you super darn close.

Makes one 12" pizza

Ingredients

  • Half of a one pound pizza dough, store bought or use the recipe here
  • 3-4 pounds boneless pork shoulder - you'll have extra but that's never a bad thing
  • Neutral oil
  • 2-3 tablespoons Sweet Hot Rub, recipe here or your fav bbq rub
  • 3/4 cup chicken broth
  • Approx 3/4 cup your fav bbq sauce
  • 1 yellow or white onion, rough chopped
  • 8 large cloves garlic, 4 of them peeled and smashed, and 4 of them finely chopped
  • 2 tablespoons hot honey
  • 2 tablespoons bourbon, definitely optional, but...
  • 1 ounce each thinly sliced red & yellow pepper and red onion
  • 1/2 cup shredded mozzarella

Directions

  1. Heat pressure cooker to brown
  2. Cut pork into l2 inch pieces, oil lightly and season fairly agressively with the rub
  3. Sear about half the pieces in the pot (don't overcrowd) until browned on all sides, then remove and repeat with remaining pieces
  4. Put all the pieces in the pot, add the chicken broth and 1/4 cup of the bbq sauce, the onion and garlic, then put on the lid and set to high pressure for 45 minutes. And when done, allow the pressure to release naturally
  5. Meanwhile combine, remaining bbq sauce, honey & bourbon if using - set aside
  6. Heat a couple teaspoons of oil in a small pan over medium high heat, and add the peppers and onion - cook until softened, about 4 minutes
  7. Preheat oven to 500
  8. Remove lid from pressure cooker, and take out some of the pork (you'll want about 5 ounces or so) some onion and garlic - shred the pork
  9. Roll dough out to 12 inches, and bake 2 minutes just to firm up slightly
  10. Remove from oven, brush on some of the hot honey bbq sauce, top with the cheese, the pork/onion, the veggies, the chopped garlic and finally a drizzle of some of the remaining bbq sauce
  11. Bake 6-7 minutes, or until the crust is golden brown
