Red Chimichurri

Red Chimichurri


  • 3 large cloves garlic, peeled
  • 1 large shallot, very finely chopped
  • 1/2 cup each loosely packed fresh parsley and cilantro
  • 1/3 cup (about 4 ounces) jarred roasted red peppers
  • Big pinch Kosher salt & pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon red pepper flakes
  • 2 tablespoons red wine vinegar
  • 1/2 - 3/4 cup olive oil


  1. Put all ingredients in a blender or processor and whiz until well blended but still a little chunky - alternatively you could simply chopped everything really well by hand or mix in a morter & pestle
  2. Use - and by use I mean cook something (skirt steak would be amazing) and brush some on in the final stages of cooking and of course when you remove from the grill before serving
