Reverse-Seared Teres Major with Soy Butter

Ingredients

  • 1 whole teres major, 10 to 12 ounces
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon neutral oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon soy sauce
  • 1 small clove garlic, minced

Directions

  1. Pat steak dry, salt generously and let sit uncovered in fridge 2 hours if possible
  2. Bring to room temp 30 minutes before cooking
  3. Heat oven to 250°F.
  4. Place steak on a rack over a sheet tray. Cook until internal temperature hits 115°F - about 25 to 35 minutes
  5. Heat cast iron until very hot. Add oil.
  6. Sear steak 45 to 60 seconds per side.
  7. Add butter, soy sauce, and garlic. Spoon over steak for 30 seconds.
  8. Pull at 125°F. Rest 8 minutes.
  9. Slice thick. It should be pink from edge to edge
