Rice Paper Bagel Spirals

Everyone was making these and calling them bagels - which they clearly are not. So we decided to make them way more interesting by stuffing them with much more fun stuff. And yes, I kept 'bagel' in the name just because.

Ingredients

Reuben

  • 3 sheets rice paper
  • 4 ounces pastrami, chopped
  • 2 slices Swiss cheese
  • 1/4 cup coleslaw
  • 2 tablespoons Thousand Island
  • Caraway seeds

Buffalo Chicken

  • 3 sheets rice paper
  • 3/4 cup cooked chicken, chopped
  • 2 tablespoons buffalo sauce
  • 2 tablespoons ranch or blue cheese dressing  
  • 1/4 cup shredded Monterey Jack cheese
  • Garlic powder & smoked paprika

Steak & Cheese

  • 3 sheets rice paper
  • 4 ounces cooked steak, thin sliced or chopped
  • 2 tablespoons steak sauce
  • 1/3 cup sautéed onions (and peppers if you want)
  • 2 slices American cheese, each cut in half
  • Montreal Steak seasoning

For All:

  • 5 eggs, beaten

Important - Dryish fillings matter.
If they're too wet, the spirals will leak &steam - and you'll lose the crisp

Directions

Reuben

  1. Dip rice paper sheets in beaten eggs, and overlap into a long strip
  2. Lay pastrami in aline across the center
  3. Add the coleslaw, then cheese, then drizzle with the dressing
  4. Roll tightly into a log, coil into a spiral, then place onto a parchment lined baking sheet
  5. Sprinkle with caraway seeds
  6. Bake at 400 in the air fryer for 12–15 minutes. If using the oven, use convection if available. In any case, the oven will take maybe 5 minutes more

Buffalo Chicken

  1. Toss chicken lightly with buffalo sauce (don’t drown it)
  2. Dip rice paper sheets in beaten eggs, and overlap into a long strip
  3. Add chicken, then cheese, then a light drizzle of dressing
  4. Roll tightly into a log, coil into a spiral, then place onto a parchment lined baking sheet
  5. Sprinkle lightly with garlic powder and smoked paprika
  6. Bake at 400 in the air fryer for 12–15 minutes. If using the oven, use convection if available. In any case, the oven will take maybe 5 minutes more

Steak & Cheese

  1. Make sure steak/onions are cooked and not wet
  2. Dip rice paper sheets in beaten eggs, and overlap into a long strip
  3. Add steak, onions,steak sauce then cheese
  4. Roll tightly into a log, coil into a spiral, then place onto a parchment lined baking sheet
  5. Bake at 400 in the air fryer for 12–15 minutes. If using the oven, use convection if available. In any case, the oven will take maybe 5 minutes more
