Royal Fried Chicken

Serves 4

Ingredients

Chicken

  • 4 chicken breasts
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 egg, beaten
  • 1/4 cup water
  • 2 cups Panko breadcrumbs
  • 1/4 cup olive oil
  • 1/4 cup butter

Sauce

  • 3/4 cup butter
  • 2 cloves garlic, minced
  • 3 tablespoons chopped parsley
  • 1 teaspoon dried rosemary
  • 4 green onions, white & light green parts chopped
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon coarse ground black pepper

Directions

Chicken

  1. Preheat oven to 350
  2. Mix flour with salt & pepper and place on a large plate
  3. Mix eggs and water
  4. Dredge chicken in seasoned flour, then dip in the egg, and finally the Panko - coat well
  5. Put butter and oil in a large pan over medium high heat, and when melted add the chicken and cook just until golden brown on both sides - remove

Sauce

  1. Turn heat down to medium, and add sauce ingredients to the same pan, mix well and when melted, add the chicken back in, and cook 20-25 minutes, or until 160 degrees – basting once after about 10 minutes
  2. Remove, baste again with more sauce and and let rest a few minutes before serving
