Ingredients

Garlic Mashed Potatoes

  • 1 head garlic
  • 3 pounds Yukon Gold potatoes, peeled and cut into even chunks
  • Olive oil, for drizzling
  • 4–6 tbsp unsalted butter
  • 1 cup heavy whipping cream
  • Kosher salt & freshly groundblack pepper, to taste

Salisbury Steaks

  • 2 pounds ground beef: I used chuck & tri tip and ground it myself - but do whatever woks best for you
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • ¼ cup chili sauce (American-style, like Heinz — not Asian chili paste)
  • 1½ tablespoon grainy mustard
  • 1 cup panko breadcrumbs
  • 1 tablespoon soy
  • 2 large eggs
  • Kosher salt & freshly ground black pepper, to taste
  • Beef tallow or oil/butter for searing
  • Parsley for serving

Guinness Mushroom Gravy

  • 1 pound cremini mushrooms, sliced thin
  • 1 clove garlic, minced
  • 3 tablespoon beef tallow (or butter/oil)
  • 3 tablespoon all-purpose flour
  • 2 cups beef broth
  • 1 cup Guinness beer
  • ½ teaspoon dried thyme
  • Kosher salt & freshly ground black pepper, to taste

Directions

Garlic Mashed Potatoes

  1. Preheat oven to 400
  2. Slice the pointy top off the head of garlic to expose cloves. Drizzle with olive oil, wrap in foil, and roast 45 minutes until soft and golden
  3. Squeeze roasted cloves into a small bowl and mash into a paste - set aside
  4. Boil Yukon Gold potatoes in salted water until fork-tender - drain well
  5. While potatoes cook, heat butter and cream together until warm and melted
  6. Use a potato ricer to rice the potatoes back into the pot, then add the butter/cream mixture, roasted garlic paste, salt, pepper and mix until creamy and smooth - cover and keep warm

Salisbury Steaks

  1. In a large bowl, combine ground meat, onion, garlic, chili sauce, mustard, panko, soy sauce, eggs, salt, and pepper.
  2. Mix gently by hand until just combined
  3. Form into 6 thick oval patties
  4. Heat a cast iron skillet over medium-high, and add beef tallow
  5. Sear patties 2–3 minutes per side until deeply browned (they’ll finish cooking in the gravy) - remove and set aside

Guinness Mushroom Gravy

  1. In the same skillet, add mushrooms and cook until they release their liquid and it mostly evaporates
  2. Add a bit more tallow/oil/butter, then stir in garlic and cook until fragrant, about 45 seconds
  3. Sprinkle in flour, stir to coat, cook 1 minute then slowly whisk in beef broth and Guinness, adding a little at a time to avoid lumps
  4. Stir in thyme, salt, and pepper, simmer until slightly thickened

Let's get it together

  1. Nestle the patties into the gravy, spooning some gravy over the top
  2. Cover and simmer gently 6–8 minutes, or until patties reach about 135°F for medium doneness
  3. Put some mashed potato onto a plate, place a Salisbury steak on top and ladle over the gravy
  4. Sprinkle with parsley and serve
