Salt & Pepper RIbs with Mac

Some things are just meant to be together. Peanut butter and jelly. Batman and Robin. Burgers and fries. Romeo & Juliet. Add ribs and mac to that list. Need I say more? 

Serves 8

Ingredients

Ribs

  • 1/4 cup light or dark brown sugar
  • 1/4 cup coarsely ground black pepper
  • 1/4 cup kosher salt
  • 2 tablespoons smoked paprika
  • 2 tablespoons garlic powder
  • 3 racks spareribs
  • 1 1/2 cups barbecue sauce

Mac

  • 2 cups lightly crushed Ritz or other buttery round crackers
  • 8 tablespoons butter, 1 stick  
  • 1/2 teaspoon coarse ground black pepper
  • 16 ounces elbow macaroni or any short pasta
  • 1 small yellow onion, diced really fine or even grated - but if you grate squeeze out the water before using
  • 1 clove garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups whole milk
  • 12 ounces sharp yellow cheddar, grated
  • 12 ounces Monterey Jack, grated

Directions

Ribs

  1. Preheat oven to 300
  2. Combine brown sugar, pepper, and salt in a bowl.
  3. Remove membrane from ribs then place each rack of ribs on a large sheet of foil (it should be long enough to fold over ribs lengthwise) and sprinkle both sides of the racks with rub. Wrap each rack individually and place on rimmed baking sheets
  4. Bake until ribs are very tender(meat will separate from bone when you wiggle it), probably 2 to 2 1/2 hours
  5. Carefully unwrap each rack of ribs; pour off any accumulated juices into a liquid measuring cup. Let the liquid cool and remove the fat from the top...if you want
  6. Transfer liquid to a small saucepan and add barbecue sauce. Cook over medium heat, stirring occasionally, until smooth and combined, 4 to 6 minutes 
  7. Heat grill to medium high, and once hot clean & oil the grates. Put on ribs meat side down - you're looking for them to get good grill marks. Once they do, flip them over so the back can get color, but now you can start brushing the top. Continue to grill, turning and basting occasionally, until ribs are beautifully browned and shiny, 5 to 8 minutes. Cut ribs between bones and serve withany remaining sauce

Mac

  1. Preheat oven to 350 and lightly grease a 9-by-13-inch or other 3-quart baking dish.
  2. Melt half the butter in a large pot, kill the heat and stir in the crushed crackers, salt & pepper - mix well then remove to a bowl
  3. In the same pot, melt the remaining butter over medium-high heat, add the onion and cook stirring, until beginning to soften, 2 to 3 minutes, stir in the garlic one minute
  4. Add the flour and cook, stirring constantly, until all the white is gone, about 1 minute.
  5. Gradually whisk in milk, whisking until smooth after each addition and bring to a low simmer and cook, whisking occasionally, until thickened and smooth, 6 to 8 minutes.
  6. Gradually add cheeses, whisking until melted after each addition. Season with salt. Stir in noodles (sauce will thicken in oven). Transfer to greased baking dish and top with cracker mixture
  7. Bake until cheese is bubbly and crumbs are golden brown, 20 -25 minutes
  8. Cool slightly before serving
