San Diego Beer-Battered Fish Tacos

San Diego Beer-Battered Fish Tacos

For anyone living in San Diego, making fish tacos on National Taco Day feels less like a choice and more like a responsibility. And these are exactly what I want: crispy beer-battered fish, crunchy cabbage, creamy white sauce and zesty pico. Finish them with a squeeze of lime and grab a cold Mexican beer - this is San Diego after all.

Makes 10-12 tacos

Ingredients

Tacos

  • 1½ pounds firm white fish, such as cod, mahi-mahi or halibut
  • Kosher salt & coarse ground black pepper
  • 1 cup tempura batter mix, plus more for dusting
  • About ¾ cup very cold Mexican lager
  • Neutral oil, for frying
  • 10–12 corn tortillas
  • Finely shredded green cabbage
  • Pico de gallo, see below
  • Lime wedges
  • Hot sauce

Pico de Gallo

  • 2/3 cup finely diced white onion
  • 2/3 cup finely diced tomato
  • 3 tablespoons chopped cilantro
  • Good pinch kosher salt & coarse ground black pepper
  • Juice of 1/2 lime
  • Squeeze olive oil

White Sauce

  • ½ cup mayonnaise
  • ½ cup Sour cream (Greek yogurt also works for a lighter version)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon hot sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • Kosher salt to taste

Directions

Tacos

  1. Cut the fish into strips about 1 inch wide and 3 inches long. Pat extremely dry and season lightly with salt.
  2. Heat 2 inches of oil to 350°F.
  3. Put a little dry tempura mix in a shallow dish. In a separate bowl, combine 1 cup tempura mix with enough ice-cold beer to make a batter slightly thinner than pancake batter. A few lumps are fine. Don’t overmix it.
  4. Lightly dust the fish with dry tempura mix, shaking off the excess. Dip into the beer batter and let the excess drip off.
  5. Fry in batches for 3–4 minutes, turning once, until deeply golden and crisp. Drain on a rack, not paper towels, and immediately hit with a little salt.
  6. Warm the tortillas directly over a burner or in a dry skillet.
  7. Build with cabbage, fish, white sauce, pico, cilantro and a squeeze of lime.

  1. Combine ll ingredients in a small bowl, mix well and set aside
