Scampi Fries

No - this is not how to make the scampi and lemon flavored puffed 'cereal' snack that's super popular in British pubs. But it is literally how to make creamy shrimp scampi, on top of a mound of fries. And it's insanely good

Serves 3-4

Ingredients

  • 1 pound 31/40 shrimp, tail & shell removed and defrosted
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes, or more if ur up for it
  • 1/4 cup vermouth or dry white wine or chicken broth
  • Kosher salt & coarse black ground pepper
  • 1/2 teaspoon Italian seasoning
  • Juice of 1/2 lemon
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 28 ounces French fries for serving

Directions

  1. Rough chop about 2/3 of the shrimp, leaving the rest whole - set aside
  2. Heat butter and oil in a large skillet over medium heat, and when melted add the garlic - cook about a minute then stir in the red pepper flakes
  3. Add the shrimp and cook, stirring until about 75 percent of the way done
  4. Pour in the vermouth, stirring to incorporate until reduce by about - while stirring scrape up any bits on the bottom of the pan
  5. Pour in cream, bring to a low simmer and start adding the cheese a little at a time, stirring as go to prevent lumps - continue simmering until it's as thick as you like
  6. Now you can add the shrimp, parsley and salt & pepper to taste - cook a bit longer until shrimp are done to your liking
  7. Serve on the fries
