Shiitake & Green Onion Eggs

30 Days of Eggs - Day 1

Adding something crispy to eggs while they're cooking might seem weird, until you remember they use tortillas for Chilaquiles in Mexico, garlic fried bread for Migas in Spain and papadum (crispy lentil crackers) for Bhurji in India. So now my sesame crackers in an Asian inspired egg dish don't seem all that silly - do they?

Serves 1

Ingredients

  • Butter
  • 1/3 cup chopped shiitakes
  • 2 green onions, chopped
  • 1 egg
  • Approximately 18 small sesame crackers, like the ones from Trader Joes
  • 1/2 teaspoon soy
  • 1/2 teaspoon sesame oil
  • Sour cream & chili crunch for serving

Directions

  1. Melt some butter in an 8 or 9 inch non-stick pan over medium heat, put in the shiitakes and cook until just beginning to soften, 3-4 minutes
  2. Add the green onions, and cook about a minutes more stirring well - then remove
  3. Add more butter, and when it melts put in the crackers, spread out to an even layer - and let sizzle away a minute
  4. Beat the egg in a small bowl and add the soy, sesame oil and salt & pepper to taste - mix well and add to the mushrooms and green onions
  5. Stir to combine, then pour over the sesame crackers, letting the egg run to the edges
  6. Cook until the bottom is mostly set, and the top still has some uncooked parts, flip over for 30 seconds then flip back onto a plate
  7. Serve with sour cream and chili crunch
