Shrimp & Egg Fried Rice

Shrimp & Egg Fried Rice

Serves 2-3

Ingredients

  • Neutral oil
  • 3 eggs, lightly beaten
  • 3/4 pound shrimp - peeled, deveined and cut into bite size pieces
  • Kosher salt
  • 3 cups cooked rice, cold
  • 1/2 cup frozen peas
  • 2 tablespoons soy
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 4 green onions, sliced

Directions

  1. Heat a large pan over medium–high and add a little oil and put in the eggs - scramble until just set, then remove
  2. Add a bit more oil and put in shrimp and a pinch of salt – cook until just opaque
  3. Add the rice, breaking it up with a spatula, add the peas and stir well to combine
  4. Add soy sauce, white pepper and the cooked eggs - mixing well
  5. Then finally the sesame oil and green onions – mix well and serve
