Smoked Beer Glazed Chicken

Smoked Beer Glazed Chicken

Makes one chicken

Ingredients

Chicken

  • 1 whole chicken(about 4 to 5 pounds), spatchcocked
  • Kosher salt and coarseground black pepper
  • Neutral oil

Beer Glaze

  • 1 can beer (lageror amber)
  • 3 tablespoonshoney
  • 4 cloves garlic,minced
  • 1 tablespoon Dijonmustard
  • 1 tablespoon applecider vinegar  
  • 1 teaspoon blackpepper

Directions

Chicken

  1. Pat the chicken dry really well, lightly oil both sides and season with salt & pepper
  2. Heat smoker to 275, and put chicken skin side up on the smoker grates
  3. Flip every 20 minutes until the breast hits about 150–155 and the thighs 170–175 (probably 60 to 90ish minutes depending on size and smoker)
  4. Once it does, brush both sides well with the glaze, ending with it skin side up
  5. Turn up the heat to 400–425 and cook another 5 to 10 minutes until the glaze gets glossy, slightly stickyand the breast is 165
  6. Rest 10 minutes beforeserving

Beer Glaze

  1. Combine glazeingredients in a small pot, mix well and simmer 78-10 minutes until slightlythickened, like a thin-ish gravy - set aside
