Smoked Mexican Chicken

Yes I smoked this, but no smoker no problem - cuz it'll still be amazing in the oven.

Makes one chicken

Ingredients

  • One 4-5 pound chicken
  • 1 tablespoon garlic paste
  • 1 tablespoon cilantro paste
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon dried oregano
  • 1 tablespoon smoked paprika
  • 2 teaspoons kosher salt
  • 1 tablespoon neutral oil

Directions

  • Preheat smoker (or oven) to 375
  • Spatchcock the chicken - that means removing the backbone (you can see it here on a turkey but it's the same principal) then dry really well with paper towels
  • Combine remaining ingredients in a small bowl, mix to combine then spread all over both sides of the chicken
  • Then put onto the smoker, or on a baking sheet and into the oven
  • Cook until an instant read thermometer reads 160 in the breast, remove and cover loosely with foil - the temp will rise a few degrees
