Smoked Steak Skewers

Steak skewers - what's not to love? Well these guys are just sliced and put together a little differently, giving you a skewer-ful of smokey, crispy thinner slices.

Makes 2 skewers

Ingredients

  • 1 pound steak, as even a rectangle as possible
  • Kosher salt & coarse ground black pepper
  • ½ cup crème fraîche or sour cream
  • 1–2 tablespoons Calabrian chili paste
  • 1 garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt to taste

Directions

  1. Your first move in prepping the steak here should be to watch the video, because it'll explain the cutting better than my words, but...
  2. Put steak in freezer 30-45 minutes to making cutting easier
  3. Preheat smoker to 275
  4. When ready, slice steak lengthwise into 1/8 inch strips, stack 5 strips on top of each other, then cut into one inch pieces, and slide about 15 or so onto a skewer
  5. Season with salt & pepper and put on smoker - cook to approximately 110 then remove
  6. While they cook combine the sour cream, chili paste, garlic, lemon juice, salt and olive oil in a bowl - mix well and set aside
  7. when the skewers are done, heat a flattop or large pan to medium high, or crank up the grill then sear skewers on all sides (a little charring is good)- you're looking for them to land between 130 and 135
  8. Serve with the sauce
