Smoky Grilled Pineapple Slaw

There’s coleslaw, and then there’s this. Sweet, smoky grilled pineapple tossed with crisp cabbage, crunchy carrots, and a tangy-sweet dressing. It’s bold, refreshing, and the perfect sidekick for anything off the grill—burgers, tacos, ribs, you name it. Honestly, it might just steal the show.

Serves 6

Ingredients

  • 1 small pineapple, peeled, cored & sliced into thick rings
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/3 cup mayo
  • 1 tablespoon honey
  • Juice of 1 lime
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • Salt & pepper to taste

Directions

  1. Grill pineapple slices on high heat until beautifully charred on both sides, remove and let cool, then chop into bite-sized pieces
  2. In a large bowl, whisk together the mayo, honey, lime juice, vinegar and smoked paprika
  3. Toss in the cabbage, carrots, red onion, and cilantro - mix
  4. Fold in the pineapple, and sason to taste with salt and pepper
  5. Chill for 15–30 minutes or serve immediately if you can’t wait
