South of the Border Scallops
Makes 12 - Who doesn’t love a scallop? Now that I think of, a bunch of people don’t. Go figure...
Ingredients
1/3 cup diced fresh mango
1/3 cup peeled and diced cucumber
1/3 cup diced red bell pepper
3 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon honey
1 pound sea scallops, rinsed and dried
1 tablespoon peanut oil
Directions
Mix all ingredients except scallops and set aside
Season scallops with salt and pepper
Heat non-stick pan over high heat
Put in oil & when just smoking add scallops and sear each side until nicely brown and a cool little sort of crust builds
Put on a plate and serve with the mango salsa
