The super tender & delicious meatballs, spicy red sauce and dots of fabulously rich ricotta makes this one damn fine pizza. This will make enough meatballs for 2 pizzas
Makes enough for two 12 inch pizzas
Ingredients
Meatballs
1/2 pound ground beef
1/2 pound hot Italian sausage
1/4 cup ricotta cheese
1/4 cup shredded Parmesan cheese, plus extra for the top
1/3 cup panko breadcrumbs
2 tablespoons garlic paste, or 4-5 cloves minced
1 egg
Kosher salt & pepper
1 teaspoon red pepper flakes
1/2 teaspoon coarse ground black pepper
Sauce
1/3 cup tomato paste
1/3 cup spicy tomato pesto - found it at my local supermarket, or from Amazon here
Combine all meatball ingredients in a large bowl, mix well to combine, shape into approximately 24 - 1.5 inch balls and put on a parchment lined baking sheet
Bake 15-20 minutes, or until 160 degrees, then remove and let cool - turn oven up to 500 if possible
Put sauce ingredients in a small pot over medium, mixing well to combine and let simmer a couple minutes, set aside
Put the ricotta, parsley, red pepper flakes, garlic & olive in a bowl, and mix to combine
Stretch out dough, top with sauce, the provolone, meatballs (I squished them flat a bit) add dollops of ricotta in between and finally a sprinkling of a little more Parm
Bake 10 - 12 minutes, or until beautifully browned and bubbly
