Thank you Bon Appetit for the inspiration. Skewers are generally not my thing, but the Thai & fish sauce got me...in the best way possible.
Serves 3-4
Ingredients
1.5 pounds boneless, skinless chicken breasts
3/4 cup Sprite
½ cup Thai sweet chili sauce
1/4 cup fish sauce
4 cloves garlic, peeled and minced
3/4 teaspoon kosher salt
Juice from 2 limes
1/4 cup chopped cilantro 1/4 cup Thai chili sauce
Directions
Cut chicken into even sized pieces, put into a zippered bag and add the sprite, chili sauce, fish sauce, garlic and salt - mix to combine then refrigerate 1-4 hours
Meanwhile combine the lime juice, cilantro and chili sauce - mix well and set aside
Skewer chicken - and if on wooden skewers, please soak in water at least an hour first
Then oil and spray grill, heat to medium high, and put on skewers
Cook until approx 157-160, remove and top with the lime/cilantro.chili sauce
