Steak & Fry Salad

Steak & Fry Salad

Think Steak Panzanella Salad, but with fries instead of croutons. And trust me, it's an 11 outta 10.

Serves 2-3

Ingredients

Steak Salad

  • Neutral oil
  • 1 pound steak, I used a coulotte but your choice - rib eye would be great too
  • Kosher salt
  • Coarse ground black pepper
  • 1 ear corn, husk & silk removed
  • 1 bundle asparagus
  • 3 Yukon gold potatoes
  • 5 cups salad greens - you do you but any combo of arugula, chopped romaine, spinach etc would be ideal
  • 1/2 cup diced sugar snap peas, cut diagonally into 1/4 inch pieces
  • 1.5 cups cherry tomatoes, cut in half
  • 1/2 cup thinly sliced English cucumber rounds, not peeled
  • 3 Holland peppers, or 4 red jalapenos
  • 1/4 cup mayo
  • 1 tablespoon soy
  • 1 tablespoon sriracha

Salad Dressing

  • ⅔ cup neutral oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • ½ teaspoon sesame oil
  • 1 teaspoon sriracha
  • 2 cloves minced garlic
  • 1/2 tablespoon ginger paste
  • Pinch of kosher salt

Directions

  1. Preheat smoker or oven to 275
  2. Lightly oil steak, then generously season with salt & pepper - put on smoker and cook to 125 degrees, then remove and set aside
  3. Heat grill to medium high
  4. Rub corn with oil, season with salt & pepper and put on grill - your goal is nicely charred all the way around, then remove and cut off the ear
  5. Oil salt & pepper asparagus and put on grill, using a grill pan if you have - cook approximately 10 minutes or until crisp tender, then remove
  6. While it cooks - peel potatoes then cut into equal size planks, approximately 1/2 " in diameter
  7. Bring a pot of water to a boil, and cook potatoes (they're not fries yet) 10 minutes, then remove to paper towels to drain, and refrigerate 15 minutes
  8. Heat a pot of oil to 325, cook fries about 5 minutes, or JUST until they start to color, then remove to paper towels and refrigerate 15 minutes
  9. Combine mayo, soy & sriracha - mix well and brush on both sides of the steak
  10. Heat grill or flattop to medium high, and cook steak about a minute a side, then remove to rest
  11. Turn oil up to 375 and cook fries one final time until golden brown and crispy - 3-4 minutes, then remove
  12. Combine all dressing ingredients in a bowl or shaker, and mix well to combine
  13. In a large bowl put the salad greens, the corn, the sugar snap peas, tomatoes, cucumbers and peppers
  14. Add dressing then toss, and add the asparagus, fries and sliced steak
