Steak Molletes

One of the greatest, quick little additions to any celebration - and even quick if you have leftover steak. I say you make them this size, then cut each half in half again.

Makes 6

Ingredients

  • 16 ounces steak
  • Neutral oil
  • Garlic powder
  • Smoked paprika
  • Kosher salt & coarse ground black pepper
  • 3 bolillo rolls, or small baguettes
  • 15 ounces refried beans, warmed
  • 1/2 cup crumbled Cotija cheese
  • 1 cup shredded Monterey Jack cheese
  • Mexican crema or sour cream
  • Salsa Macha for serving
  • Chopped cilantro

Directions

  1. Heat grill to medium high
  2. Lightly oil steak, and season both sides with garlic powder, paprika and salt & pepper - cook steak to desired doneness (and medium rare around 135 degrees would be ideal here) - set aside and let rest 10 minutes and slice into thin pieces
  3. Slice rolls horizontally, lightly oil the cut sides and toast or grill
  4. Build: spread some refried's on each cut roll, add some cotija, the steak and the Monterey Jack - broil until melted, then remove and drizzle with the crema and top with some salsa macha or a little hot sauce and give them a little cilantro to finish
