Steak Street Tacos

Steak Street Tacos

Little steak tacos, with a layer of refried beans...charred onions and jalapeno & avocado cream - what could be better? Five or six of them, that could be better.

Ingredients

Avocado Crema

  • 2 cloves garlic, minced
  • 2 tablespoons cilantro leaves
  • 1 avocado
  • Juice of 1/2 lime
  • 1/4 cup sour cream
  • 3 tablespoons canned, diced jalapenos
  • Kosher salt & pepper to taste

Steak

  • One steak, about 8 ounces (think about 1/2-3/4 ounce steak for each taco)
  • Neutral oil
  • All Purpose Rub, recipe here
  • 1/2 large onion, any color will be fabulous
  • Corn tortillas, street taco size
  • Refried beans, warmed for serving

Directions

Avocado Crema

  1. I made this in a mortar & pestle, but you can just as easily mash everything well in a bowl together - set aside

Steak

  1. Heat grill to medium high
  2. Lightly oil steak, season with all purpose rub and put on grill
  3. Cook, turning often until it's where you want it (and if you're wondering, I want it medium rare or somewhere around 133 degrees) remove when done and let rest 5 minutes and slice into thin pieces
  4. While it cooks, lightly oil onion and add to grill, cooking until nicely softened and beginning to char - remove and rough chop into smaller pieces
  5. When ready to serve, warm a tortilla slightly to make it pliable, spread about a tablespoon of the beans on each one, fold in half, lightly oil the oil outsides and put back on the grill
  6. Cook until lightly charred on each side then remove, open and put in some onion, some steak and finally top with the crema
  7. Rinse and repeat
