Sticky BBQ Chicken Sandwich

No shit this is one crazy, sticky delicious sandwich. And aside from the slaw, it all hppens in one pan - and ya gotta love that.

Makes 2 (or 4)

Ingredients

Chicken

  • 4 boneless skinless chicken thighs (juicier than breasts)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp neutral oil

Sticky BBQ Sauce

  • ½ cup barbecue sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 tsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp chili flakes

Sandwich

  • 4 brioche buns (buttered & toasted)
  • 4 slices sharp cheddar or pepper jack
  • Creamy coleslaw (store-bought or homemade: cabbage, carrot, mayo, vinegar, sugar, salt)
  • Dill pickles (slices or chips, for crunch & tang)
  • Butter or mayo for toasting buns

Directions

  1. Lightly oil thighs, then season with salt, pepper, paprika
  2. Sear in a pan with a splash of oil, 4–5 minutes a side until nearly cooked through - remove and set aside
  3. In the same pan, lower heat, add garlic and cook 30 seconds
  4. Then stir in the bbq sauce, honey, soy, vinegar & chili flakes
  5. Simmer until glossy & slightly thickened, 2-3 minutes
  6. Return the thighs to the pan and coat fully in sauce, flipping until sticky and caramelized
  7. Add cheese slices, cover briefly to melt
  8. Build: grilled bun (I brush with mayo and grill until golden), coleslaw, chicken with cheese, pickles and top bun
