If I had a photo, I would most certainly use it. That is... unless the photo I have sucks. For now, you'll just have to picture a big heaping helping of
1 pound hanger steak, flank, sirloin - sliced thin across the grain
2 tablespoons cornstarch
Kosher salt and coarse ground black pepper
Juice from 2 or 3 large oranges – enough to make 1/2cup orange juice
Zest from one orange
2 tablespoons soy
1 tablespoon rice vinegar
2 tablespoons sugar
½ teaspoon red pepper flakes
Neutral oil
1 small red pepper, cut into strips
3 cloves garlic, minced
1 inch ginger, finely minced
Sliced green onions for garnish
Directions
Toss sliced beef with cornstarch, salt and pepper –toss to mix
Combine orange juice, zest, soy, vinegar, sugar and red pepper flakes - stir to dissolve the sugar
Heat a pan over high heat, add a thin layer of oil and when just smoking, add the beef in batches and cook until crisp at the edges - remove
Add red pepper, and cook a couple minutes until beginning to soften - then lower to medium and add garlic and ginger - stir20–30 seconds
Add orange juice mixture, let bubble away until beginning to thicken and get glossy - a minute or 2
Add the beef back in and toss to coat, finish with green onions and serve
