Street Corn Guacamole

Street Corn Guacamole

The addition of corn to regular guacamole is simple and fantastic. And btw, no fresh corn - no problem. Canned will get you there just as deliciously.

Makes about 3 cups

Ingredients

  • 3 ripe avocados
  • 1 large ear of corn, or about a cup of canned whole kernel corn, drained
  • ¼ cup finely diced red onion
  • 1 jalapeño, seeded and finely diced
  • 3 tablespoons chopped cilantro
  • Juice & zest of 1 lime
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Directions

  1. This is optional, but a huge time saver: peel off the husk, wrap the ear in cling film and microwave 5 minutes, then
  2. Lightly oil the ear and grill over medium high heat until about 75% charred, then cut off the cob. Using canned? Char the kernels in a hot pan with a little oil
  3. In a large bowl, smash the avocados until mostly smooth but still a little chunky
  4. Add the cooled corn, red onion, jalapeño, cilantro, lime juice + zest, mayo (if using, but go on and use it), chili powder and salt & pepper to taste
  5. Mix until just combined, then taste and adjust salt & pepper, and a little more lime if needed
