Stuffing Fried Rice

Stuffing Fried Rice

Makes 2 servings

Ingredients

  • Neutral oil
  • 1 cup leftover stuffing
  • 1½ cups leftover cooked rice, cold
  • ½ cup leftover Thanksgiving veggies (brussels sprouts, green beans - anything works
  • ½ to 1 cup leftover turkey or ham, diced
  • 2 green onions, diced, plus more for serving
  • 2 teaspoons soy sauce
  • 1 teaspoon oyster sauce
  • 2 eggs, beaten
  • 1 tablespoon butter

Directions

  1. Heat a tablespoon of the oil in a large pan or wok over medium-high, and when almost smoking add the stuffing, break it up a bit and let it get crispy
  2. Drop in the veggies and turkey or ham - cook about a minute, stirring constantly
  3. Add the rice and mix everything together, breaking up any clumps
  4. When the rice is hot, push everything to the side, add a bit more oil and the beaten eggs to the empty space, scramble it, then mix it back in
  5. Add the soy, oyster sauce and butter - mix well, then plate
  6. Serve with green onion
