Tacos Gobernador

Tacos Gobernador are everything you want in a taco: smoky, cheesy, a little messy and loaded with shrimp. If a shrimp taco and a quesadilla had a ridiculously flavorful baby, this would be it.

Makes 6-8

Ingredients

  • 2 tablespoons butter
  • 2 poblano peppers, seeded and cut into thin strips
  • 1 white onion, thinly sliced
  • 1 serrano pepper, finely diced
  • 2 Roma tomatoes, seeded and sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon soy
  • 1 pound peeled shrimp, cut into bite sized pieces
  • 1 tablespoon minced chipotle pepper
  • Kosher salt & coarse ground black pepper
  • 1/2 cup chopped cilantro
  • 1/2 pound shredded Monterey jack cheese
  • Corn tortillas

Directions

  1. Melt butter in a large pan over medium/high heat, then put in the poblanos and onion - cook 3-4 minutes until just softened
  2. Add the serranos & stir through a minute (careful, cuz when it hits the pan it'll hit your nose) then put in the tomatoes, stir 2 minutes
  3. Put in garlic, and when fragrant stir in the oregano, and the soy
  4. Add the shrimp, stirring as you go - your goal is to get them 'just cooked' - this won't take more than a couple minutes
  5. Add the chipotle and cilantro - mix through and you're ready to make some tacos
  6. Heat neutral oil over a medium high flattop or large pan, and put down some tortillas and top with some cheese then spoon some of the shrimp mixture on top
  7. Fold it over like a quesadilla, and cook until the bottom is golden and crispy and the cheese is melty, flipping once, about 2–3 minutes per side - you want a little crunch on the outside with a gooey inside
  8. Serve hot - that was obvious, right?
