Teriyaki Spam Sliders
Makes 6

Ingredients
Olive oil
1/2 large medium onion, thinly sliced
1 can Spam, sliced short-wise into 6 even pieces
6 Hawaiian roll sized pineapple slices, 1/4 inch thick
6 Hawaiian rolls, cut in half and lightly toasted
1/3 cup Teriyaki sauce (I like the JES brand)
3 tablespoons mayo, preferably Jaranease ’Kewpie’
Directions
Cook onions with oil until beautifully softened, about 5 minutes - set aside
Lightly brush spam with olive oil and cook in a grill pan or non-stick pan along with pineaaple slices until nicely browned
Mix half the teriyaki sauce with mayo and set aside
Flip spam & pineapple over and brush with remaining teriyaki sauce
When bottom side of each is lightly browned, flip again and add more teriyaki
Put some teri/mayo sauce on the bottom of each bun, add some onions, the Spam, the pineapple and finally top bun
